Broccoli soups usually tend to get a little bland for me. So, I have added tomato for some zing in flavor and mushrooms to nibble into. Seasoning with onion does make a difference, so please don’t opt out on that.
Garlic bread, well I really don’t have much of a recipe to write for that. All I did was mash a clove of garlic in olive oil. Remove the garlic pieces. Season the bread with that oil, top it with mozzarella cheese and some finely chopped mint leaves (they go well!). Bake it for 10mins. Your accompaniment is ready. Now for the main dish….

Broccoli – 1 bunch diced and a few finely chopped pieces for seasoning
Tomato – 1 medium diced
Button mushrooms – 6 finely chopped
Onion – 1 small finely chopped
Vegetable stock- 2 cups
Butter -1 table spoon
Ground pepper- 1 teaspoon
Fresh cream - 1 dollop
Salt to taste
Method:
1. Cook broccoli, tomato and chopped mushrooms in vegetable stock till fully done and mushy.
2. Scoop out the chunks from broth and puree.
3. Add mixture to broth and get it back on the flames (on very low). Now stir in cream. Adjust water content by adding hot water and off the flame.
4. In a pan, melt butter add onion sauté for few minute. Then add finely chopped broccoli.
5. Add seasoning to soup.
6. Serve with accompaniment of my choiceJ…hehe…or urs.
I have to agree with you, the usual broccoli soup is a little bland, lately I added some almonds to eat, just for crunchy texture ;)
