GRILLED CHICKEN & SMOKED CHILLY CURD WRAP - fake but healthier Shawarma!!

Thanks everyone for voting me to the top 9 on FOODBUZZ.

My little girl loves chicken shawarma...in fact that’s probably the only source of chicken she eats (horribly choosey about food. *Sigh!!*) So, in an attempt to make something similar at home, I have been improvising for some time now. I have been trying to make a healthier version of this also because it’s one of things I too crave for 24x7...hehe...I just totally love Chicken Shawarma Sandwich.

For those of you who don’t know what a shawarma is....I’ll quote from Wikipedia: Shawarma is shared by many country variations. In Greece, it is called gyros, meaning "turned". In Armenian, it is "Tarna", literally meaning "to turn", and in Turkish it is called döner kebab, which in turn means "turning kebab".

In our part of the world, it’s basically a rotisserie grilled chicken (with fat dripping all over) sandwich with french fries, garlic sauce and sometimes veggies or pickles rolled in pita bread.

My version has chicken minus fat plus some veggies and a yummy spicy sauce but tastes almost like shawarma and much healthier too.

Now, genuinely speak, you will love this sandwich even if you haven’t tried shawarma J. It’s a nice healthy and quick recipe to whip up! And I promise, every one of you who tries it will love it!!

I am usually very patient with my food while clicking my shots but today, I just couldn’t resist taking after 4-5 shots and (As you can see below) I ended up eating half of the sandwich even before I finish taking picture!!

In the recipe, adjust the quantity of vinegar to your taste and don’t leave out any ingredient! It’s a complete treat J.

And by the way, you can convert this into vegetarian by replaing chicken with eggplant and french fries!! I'll be posting a vegan version of this wrap very soon.

The exciting part of our sandwich is the smoked red chilli curd. You’ll love it!!

Ingredients: (Makes 4 sandwiches)

Chicken fillets - 4 pounded and flattened well
Pita bread/khuboos - 4
Garlic - 6 cloves crushed
Lime juice - from ½ lemon
Pepper - 2 teaspoon
Fresh mint leaves - 4 sprigs leaves only
Tomato - 1 sliced
Hung curd or greek Yogurt - 1 cup (I used low fat)
Sliced black olives - 6 tbsp
White vinegar - 2 tbsp
Dried red chillies - 4
Butter
Salt to season

Method:

1.       Toast dried red chillies in a dry pan for a minute on a high flame.
2.       Remove seeds and crush chillies into flakes and mix with curd.
3.       Add vinegar, salt to season and black olives.
4.       Mix well and refrigerate overnight. You can make and store this sauce for 3 or 4 days.
5.       Pound chicken fillets till they are really thin. Use the flat side of a heavy knife if you don’t have a hammer.
6.       Rub salt, pepper, garlic and lime juice on both sides of the chicken fillets and refrigerate for 15mins.
7.       Heat you grill pan or a non stick pan and rub a thin layer of butter on it.
8.       Place the chicken fillets in the pan. Sear each side till golden brown crust appears and gets a little charred. (the chars give it a smoky flavour)


9.     Cut open the pita breads and transfer fillets, one by one into the bread.
10.   Now shred each fillet into thin slices.
11.   Add a couple of tablespoons of the chilly curd over it.
12.   Place a thin layer of mint leaves over it.
13.   Top with 2 or 3 slices of tomato.
14.   Wrap it up tightly and chomp, chomp, chomp!!!!

Gosh!! I think I’ll just go and make one more now J. Composing this post has left me craving for it!!!

  2. That photograph is A-MA-ZINGGGG!!! And i never knew shawarmas can be prepared so easily at home. I am obsessed with the shawarmas at this place called pita inn and yours look very much like theirs. Even they have that curd chutney which tastes heavenly! Hehe

  3. Oh yum!!! I love the idea of healthy-fying anything, especially comfort or casual food. I always crave a good shawarma here and there. The juicy chicken with the all the toppings. I'm going to have to try your version soon!

  4. I LOVE shawarma (we make ours with lamb) and this looks just amazing. Best of all has got to be that curd. I've got some Greek yoghurt that needs using here and this is just the thing for it! Thanks so much for this recipe.

  14. This looks absolutely fabulous!! We are lucky enough to have a Lebanese pita bakery a few blocks from the house who make killer shawarmas, donnaires, fatires....lentil soup is also amazing! I will have to try this though!

  23. @Kitchen Morph: use the regular vinegar and adjust the taste to ur choice but just keep in mind that the chicken and pita will reduce the flavours if u dont keep it a little on the higher end =) and thanks for the comment regarding my new look =) Its my own design =)
